Raspberry Wine

 

The Distillers Company and the Scottish Development Agency funded a team of biochemists at Heriot-Watt University in Edinburgh to make wine or any other alcoholic drink out of raspberries.

 

“Our job is to assess the basic properties of the fruit to see how fermentable it is and, if it ferments easily, what sort of flavour it has”, says the team leader, Dr Colin Slaughter..

 

He is lust beginning the one-year feasibility study and has already made preliminary runs but was not prepared to describe the taste of his early efforts. All he could reveal was that it did not taste much like raspberries and it was not sickly or sweet.

 

If raspberries do not make a good wine by themselves he is at liberty to add blackcurrants and gooseberries until he finds the perfect wine for the Scottish palate. If that still does not work, he can fortify it with alcohol to produce a distinctive Scottish liqueur to rival the French framboise or make a de-alcoholised drink.

 

Dr Slaughter and his colleagues still have a long way to go. “Fortunately, I'm not averse to a drink myself and we’ve got a of people here who are prepared to test it."
